Onion “Dolmades”
Ingredients:
1 kilo of mince meat half pork half beef
2 cups of brown rice (Carolina)
2 tomatoes

2 fresh onions (dry and chopped)
Parsley
Mint
Oregano
1 courgette grated (big pieces)
Salt, pepper
2 kilos of large onions (for wrapping)
1 egg
Juice from 2 lemons (for the egg and lemon sauce)
Preparation:
Pour all the stuffing ingredients in a bowl and knead together. Then slice the onions gently and remove the top layers. Boil water in a pot and put them in to soften and then using a strainer let them cool. Then start stuffing the onions with the mixture and wrap them up (they don’t have to be closed from the side). Place them in a pot and cook on at low heat adding a bit of oil and water, enough to cover them up. Place a plate on top. Then make the lemon and egg sauce adding the juices from the onions and pour on top.
