Stuffed Tomatoes with Octopus (for fasting)Ingredients:
5-6 large tomatoes
1 kilo - octopus
2 large onions (chopped)
2 cups of rice (Karolina)
1 cup of parsley
1 cup of olive oil
Salt, pepper
Preparation:
Open the tomatoes (slice the top off and remove the inside part with a spoon) and season with salt. In a saucepan heat the oil and add the onions and the octopus (which has to be minced just like minced meat) and sauté. Then add the inside part (chopped) from the tomatoes, season with salt, pepper, parsley and at the end add the rice. Once they come to a boil, the stuffing is ready. Stuff the tomatoes, place in a baking pan, sprinkle with olive oil and water and cook at 180ο C for 40 minutes.
